Using herbs as salad vegetables

The difference between herbs and vegetables is therefore not very clear. There are all kinds of tasty herbs that you can use as vegetables. Flat-leaf parsley

There are roughly two types of parsley: flat-leaf parsley and curly parsley. In principle you can use both as a basis for a salad. You can buy a bunch of flat-leaf parsley for around one euro. You can add oil, vinegar and some other vegetables such as cucumber and tomato. This is how you make a salad with flat-leaf parsley as a base.


Sellerie is usually seen as a soup herb. That is not entirely justified because the full flavor of celery is ideal for making a salad. Sellerie can be mixed with other leafy vegetables such as turnip greens and kale. Adding paprika is also a good option; This is how you add crunchy elements to the salad.


Coriander leaf is either very tasty or disliked because of its soapy taste. People who like it can use the leaf raw as a salad leaf. It is a good idea to mix coriander bath with leaves that have a less pronounced taste, such as iceberg lettuce or regular lettuce. Make sure you use more coriander leaves than other types of lettuce. This way you get a unique, mouth-watering salad combination for gourmets. By the way, coriander is very healthy; it has an anti-bacterial effect.

Basil leaf

Basil is an herb that gives tomatoes a better taste. You can use a whole bunch of basil to season one tomato; you then have a great basil tomato salad. Finish it off with some olives and possibly add some fresh oregano leaves or marjoram leaves. It is also a good idea to toast a piece of bread, cut it into small cubes and roast it in garlic oil for half a minute to one minute. This is how you make fresh croutons yourself. This will be a summer salad to make often.


You can make an excellent salad from chicory, which sometimes grows wild even in the middle of the city. This herb is a typical example of an herb that has been elevated to a vegetable. Cultivated chicory is chicory but also endive! Be original and make a salad of chicory, endive and chicory. Add some sweet dried fruits to balance the bitterness. You can also add something spicy such as a small piece of shredded hot pepper, a pinch of black pepper or perhaps even a sliced ginger ball in syrup. There are also shredded ginger pieces for sale that you can drain and add to a salad. For a change, drink a glass of ginger syrup with water.


Chervil can grow in your own garden; You don’t often see this plant fresh in the store. It is an excellent salad plant. You can combine chervil with angelica leaves – another beautiful unknown salad leaf – dill, wild garlic, chives or pipe garlic and to top it all off: nettle! Pour the nettle leaves with boiling hot water; and rinse them after ten seconds; then they won’t sting anymore.


The lovage plant grows very large in the garden. It dies in winter. It would be a shame if you didn’t harvest a large bunch of leaves at least once to make a tasty salad. Lovage is a very tasty leaf. It is eaten, among others, by people who are no longer allowed to eat salt by their doctor. Lovage has a nice full taste. It tastes a lot like maggi; that is why it is called the maggi plant. You can mix the leaves one on one with lettuce leaves, or perhaps even use more lovage leaves than lettuce leaves. Add some grated carrot for a sweet touch; Carrot is then used as a sweet herb and lovage as a lettuce leaf. Guests will be amazed.


Flowers are not herbs; they are plant parts in themselves. But because original ways of making salads are described here, the mention of flowers cannot be missed. Flowers can enhance any salad, but you can also make a salad from just flowers! It is important to see which flowers are edible.

Herb salad mixes

Mix equal parts chives, basil, parsley, cilantro leaves, mint and thyme; preferably fresh from your own garden, but from the market is also possible. Make a small side salad from the leaves. Add a small amount of chopped onions and peppers and, if desired, a surprising strawberry, pineapple or cantaloupe melon.
